Something you might not know about me: I was born and grew up in Nigeria. Many of us in our expat community dreamed of eating apples. We baked faux apple pie, and ate mango sauce instead of apple sauce. Little did I know that when I was grown up I would live next door to an apple orchard. Then all I wanted was a mango fresh off the tree.

As I traveled between countries I saw many contrasts not just in the type of food, but in the availability. In Nigeria at that time there weren’t many processed foods, and we prepared everything from scratch. In the United States a grocery store has aisles and aisles of food choices that can be overwhelming. By the time I was ready to choose a career there was no doubt in my mind that I wanted to learn more about food.

My Education and Experience

After completing my Bachelor of Science in Nutrition at Penn State University, I worked with clients at all stages of life. This included pregnant and breastfeeding women, infants and children with the WIC program, and food service positions in both daycare centers for children and geriatric communities.

To train as a Functional Nutritionist, I went back to school for my Master of Science in Human Nutrition at the University of Bridgeport. This program has a focus on Functional Nutrition, bio-individuality and a scientific, evidence-based approach. 

Since then I have completed 1000 hours of supervised practical experience and passed a rigorous exam to qualify as a Certified Nutrition Specialist® (CNS®).

I also completed a year-long program with Functional Medicine Coaching Academy to become a Functional Medicine Certified Health Coach.

As a part of my continuing education, I completed the Nutritional Genomics course offered by BCNS to become a Certified Nutrition Genomics Specialist.

It’s hard to believe, but I have been in the Nutrition field for over 40 years now! I have enjoyed working with people of all ages, and look forward to many more years.

My Editorial Process

All content on wholestorynutrition.com is created or approved by a Certified Nutrition Specialist® and Licensed Dietitian Nutritionist, with a Masters degrees in nutrition, at least 1000 hours of supervised practice through an internship program accredited by the BCNS (Board for Certification of Nutrition Specialists), and completion of a rigorous registration exam.

As a Certified Nutrition Specialist®, I also complete 75 hours of continuing education every 5 years to stay on top of the latest nutrition science, and maintain my credentials.

The information presented in the articles on this site is evidence-based, citing peer-reviewed research for factual statements. Any anecdotal evidence is clearly identified. Articles are periodically reviewed and updated to make sure they are still in line with the most up-to-date nutrition research. The world of nutrition science is always changing. During the pandemic I lost 30 lbs that I didn’t need to lose. Elizabeth helped me to gain weight and develop a healthier diet.  I gained 10 lbs so far and I haven’t had Lean Cuisine since she and I started working together. Elizabeth listens to you and takes a genuine interest in your goals and helps you get there!

 I contacted Elizabeth after suffering with arthritis-like pain.  Conventional medicine wanted me on all sorts of prescriptions.  That wasn’t what I wanted, so I sought out nutritional help.  She went through my diet and came up with a plan based on my needs.  I could feel myself getting better day by day.  It took a few months, but I am pain free and drug free.  Not even Advil!
